I can spend hours watching these minute clips and I save each one I love for a Sunday lunch.

This past weekend, I went for this grilled steak and vegetable salad.
It’s so simple, yet incredibly delicious.
Jerad and I have been on a health-kick lately so this was perfect for a Sunday lunch.
See, I’m the type who needs to eat different foods, so, though I am eating healthy, I’m the opposite of Jerad and can’t stick to chicken and vegetables for lunch and dinner.
I need variety.
No idea how he does it, I’ve tried and it doesn’t work me.
No shame in admitting that by doing that I always get bored and end up eating a bag of potato chips…
Now back to the grilled steak and vegetable salad
Like I said, it’s super simple to make!
I had help from, Jerad with grilling the steak (you will have leftovers, so prepare for a nice dinner)!
Mainly because I like my steak well-done but still juicy, and he’s the only person I know that can make that happen.
He marinated the steak the night before (the recipe does not call for), in red wine vinegar, salt, pepper, tomato basil garlic salt, and tons of garlic!
We have a saying at the house “there’s no such thing as too much garlic” we legit add TONS of minced garlic to every and anything—bonus: garlic has a lot of health benefits so it’s a win.
The cook time for the steak really depends on your personal taste.
Just be sure you get it on the grill before the veggies, as it takes longer to cook.
Grilling the vegetables is super easy!
This recipe called for, zucchini, summer squash, yellow & red bell pepper (I added orange), and a red onion.
Make the same red wine vinegar marinade you made for the steak and the vegetables are ready to be grilled!
Grill them for about 2-3 minutes on each side and set them aside to cool down.
Cut the vegetables into bite-sized pieces and the steak into strips.
And lastly, arrange everything on a bed of mixed greens!
The recipe says to top it with red wine vinegar but I made my homemade salad dressing and topped the steak and veggie salad with that.
I promise you, if you’re making this salad for others it will look like you spent hours working on—and most importantly, taste like that!
